I’ve also made it successfully with oat milk and rice milk (with or without lemon juice to form a vegan buttermilk). Sometimes, if using wetter fruit like peach, I’ll pop the dough disc into the freezer for ten minutes to solidify a bit. Perfect recipe. Thank you!

Hi Frank, I’m wondering how you would end up with a puddle since the measurements are 2 cups dry flour to about 1 cup liquid, which should be a dough. Did you possibly use 1 full can of coconut milk instead of 1 cup?

I guess there must be something wrong with my ingredients? Literally did not skip a single step, double checked all my measurements, made sure I didn’t forget anything and I did not end up with a dough, I got a puddle. Even after letting sit in the fridge. And yes I used canned coconut milk and solid coconut oil. I don’t get it. ☹️
